Lo-Fat Broccoli Skillet Quiche - cooking recipe

Ingredients
    3 Tbsp. Sunflower margarine
    1/4 c. onion, chopped
    1 1/2 c. broccoli, chopped
    1/2 c. tomato, chopped
    1/2 c. skim milk Mozzarella cheese, shredded
    1/2 tsp. salt
    `1/8 tsp. pepper
    1 c. refrigerated imitation eggs
Preparation
    In Teflon-lined 9-inch skillet, melt margarine over medium heat.
    Add onion and cook until tender.
    Add broccoli, tomato, cheese, salt and pepper.
    Pour imitation eggs over vegetable-cheese mixture; do not stir.
    Reduce heat to low. Cover and cook 10 minutes or until quiche is set.
    Remove from heat and let stand 5 minutes.
    Cut in wedges to serve.
    Serves 4 to 6.
