Borscht - cooking recipe

Ingredients
    3 medium sized beets (organic)
    2 small carrots (organic)
    1 c. chopped red cabbage
    1 medium size onion
    2 Tbsp. miso or soup base
    3 Tbsp. apple cider vinegar
    2 tsp. tamari or 1 tsp. salt
    sour cream
Preparation
    Chop beets, carrots and onion.
    Cover with water in a saucepan and bring to a simmer.
    Cook over medium heat for 15 minutes.
    Add cabbage, miso and apple cider vinegar.
    Cook for 10 more minutes. Add tamari or salt to taste.
    Serve hot in bowls with a dollop of sour cream on top.
