Beef Summer Sausage - cooking recipe

5 lb. ground beef
1/2 tsp. onion powder
1/2 tsp. garlic powder
1 1/4 tsp. pepper
3 1/4 Tbsp. Tender Quick
1 tsp. celery seed
2 1/2 tsp. mustard seed
1 to 2 Tbsp. liquid smoke
1 c. water
1 to 2 tsp. whole peppercorns (optional)
Preparation

Crumble ground beef in a large bowl.
Mix the next 6 ingredients together and sprinkle over ground beef.
Mix water and liquid smoke together and pour over ground beef.
Add peppercorns and mix thoroughly, best method is to use your hands.
Divide into 3 equal portions and shape into rolls.
Wrap in foil.
Refrigerate for 24 hours.
