Baked Ahead Potatoes - cooking recipe
Ingredients

6 large baking potatoes
1/4 c. butter
1 tsp. salt
1/2 tsp. pepper
1/2 c. sour cream
grated Swiss or Parmesan cheese
Preparation

Scrub, pierce and bake potatoes at 425\u00b0 for 1 hour or until tender.
Cool slightly.
Break in half lengthwise and scoop potatoes into a large bowl.
Beat in butter, salt, pepper and sour cream.
Refill shells.
Sprinkle grated cheese on top.
Bake at 350\u00b0 for 30 or 40 minutes.
Freeze or refrigerate as desired. Serves 6.
