Low Calorie Pineapple Cheesecake - cooking recipe

Ingredients
    2 envelopes unflavored gelatin
    1 c. boiling water
    1 tsp. vanilla
    2 tsp. lemon juice
    4 pkg. sweetener
    1 lb. low-fat cottage cheese
    1 large can crushed pineapple (in its own juice)
    9 oz. Cool Whip
Preparation
    Blend together first two ingredients in a blender.
    Then add the next four ingredients and blend until smooth.
    Then fold in last 2 ingredients and pour into large baking dish.
    Refrigerate until firm.
    Cut into slices and serve.
