1 Tbsp. margarine
1 medium onion, minced
3 Tbsp. flour (plain)
1 tsp. salt
dash of pepper
1 1/2 c. skim milk
4 medium potatoes, sliced thin
Preparation

In a 2-quart saucepan, over medium heat, cook onions in margarine until tender (approximately 5 minutes).
Stir in flour, salt and pepper until blended.
Gradually stir in skimmed milk. Cook until mixture thickens, stirring constantly.
