Whipped Sweet Potato With Yogurt And Chives - cooking recipe

Ingredients
    2 large sweet potatoes (2 lb.), baked and peeled
    2 eggs, beaten, or 1/2 c. prepared egg substitute
    1/3 c. plain yogurt
    1 Tbsp. each minced chives and minced fresh flat leaf parsley
    salt and pepper to taste
Preparation
    Preheat oven to 350\u00b0.
    Mash sweet potatoes.
    Blend in the eggs, add yogurt and whip with a hand-held mixer until potatoes are fluffy.
    Add more yogurt, if needed.
    Stir in the chives, parsley, salt and pepper.
    Bake for 30 minutes or until lightly browned on the top.
