Hearty Corn Chowder - cooking recipe
Ingredients

1 1/2 onions, finely chopped
2 Tbsp. oil
1 c. water
3 potatoes, peeled and chopped
1 1/2 tsp. salt
1/4 tsp. pepper
1 (16 oz.) can corn, drained
2 c. skim milk
Preparation

Saute onion in oil.
Add water, potatoes and seasonings.
Cook until potatoes are tender, about 15 minutes.
Mash potatoes slightly.
Add corn and milk.
Heat until simmering.
Be careful soup does not boil.
Serve with parsley garnish, if desired.
