Chilled Poached Lemon Apples - cooking recipe

Ingredients
    2 c. water
    1 c. sugar
    1 lemon, thinly sliced
    juice of 1 lemon
    8 small cooking apples, peeled and cored
Preparation
    Combine first 4 ingredients in a Dutch oven, bring to a boil. Add apples and return to boil.
    Cover, reduce heat and simmer 12 minutes or until apples are tender.
    Remove apples to 2-quart casserole dish.
    Bring syrup to a boil and cook 10 minutes or until reduced to about 1 cup.
    Pour syrup over apples, cool. Cover and refrigerate.
    Serve cold.
