Russian Pancakes Or Blini - cooking recipe

Ingredients
    1 pkg. dry yeast
    3 c. lukewarm milk
    3 c. flour (buckwheat if possible)
    3 eggs, separated
    1/2 c. butter
    1/2 tsp. salt
Preparation
    Dissolve yeast in 1/4 cup milk or enough to make a sponge. Let rise in a warm place about 3 hours.
    Cream egg yolks, butter and salt.
    Add yeast sponge, remaining flour and remaining milk. Beat until smooth.
    Cover.
    Let stand for 30 minutes.
    Beat egg whites until stiff and fold into batter.
    Butter a skillet lightly.
    Proceed like for pancakes, about 3 inches in diameter.
