Oatmeal Cookies With Dried Cranberries And Apricots - cooking recipe

Ingredients
    1/2 c. (1 stick) butter or margarine, softened
    1/3 c. each: granulated sugar and light brown sugar, packed
    1 large egg or egg substitute
    2 tsp. vanilla
    2/3 c. all-purpose flour
    1/2 tsp. baking soda
    1/2 tsp. salt (optional)
    1 c. rolled oats
    3/4 c. each: dried cranberries and apricots, snipped into bits
Preparation
    Put rack in center of oven.
    Heat oven to 350\u00b0.
    Lightly grease baking sheet.
    Cream butter or margarine and sugar with an electric mixer or food processor fitted with a metal blade.
    Add egg and vanilla.
    Mix until smooth.
    Add flour, baking soda, salt and oats.
    Mix until just combined.
    Stir in cranberries and apricots.
    Drop batter by tablespoon onto a prepared baking sheet, spacing cookies 2 1/2-inches apart.
    (They spread considerably.) Bake until cookies are a medium brown, about 11 minutes.
    Let cool 1 minute on cookie sheet.
    Use metal spatula to transfer to wire rack to cool completely.
