Ingredients

6 fresh beets
1 c. olive oil
1/4 c. vinegar
1/2 tsp. sugar
1/2 tsp. salt
2 to 4 whole cloves
1/4 c. thinly sliced onions
6 c. water
1 Tbsp. vinegar
1 tsp. salt
Preparation

Heat water, 1 tablespoon vinegar and 1 teaspoon salt to boiling.
Add beets.
Cover and heat to boiling; cook 30 minutes or until tender.
Drain.
Cut beets into slices.
Mix olive oil, 1/4 cup vinegar, sugar, 1/2 teaspoon salt, cloves and onions.
Pour over beets and marinate overnight.
