Sweet Potato Pie - cooking recipe

Ingredients
    4 c. mashed, cooked sweet potatoes
    2 c. firmly packed brown sugar
    1 stick margarine, softened
    4 eggs, separated
    1 tsp. ground ginger
    1 tsp. ground cinnamon
    1 tsp. ground nutmeg
    1/4 tsp. salt
    1 can evaporated milk
    1 can sweetened condensed milk
    2 c. coconut
    2 tsp. lemon flavoring
    1/4 c. white sugar
    4 uncooked pie shells
Preparation
    Beat egg yolks. Add sweet potatoes, brown sugar, margarine, spices, salt and sweetened condensed milk in a large mixing bowl; beat until fluffy.
    Add evaporated milk and lemon flavoring; beat just until blended. Stir in coconut. Beat egg whites with electric mixer until foamy; gradually add white sugar, one tablespoon at a time, beating until stiff peaks form.
