Carrot Bran Muffins - cooking recipe

1 c. bran flakes
2 c. shredded carrots
2 Tbsp. brown sugar
1 Tbsp. lemon juice
1/2 tsp. baking soda
1 egg, slightly beaten
3/4 c. skim milk
1 c. whole wheat flour
2 Tbsp. vegetable oil
1 tsp. baking powder
1/4 to 1/2 tsp. cinnamon
Preparation

Combine bran flakes, milk and carrots; let stand 5 minutes. Add remaining ingredients, stirring until particles are moistened. Line each muffin tin with two paper liners; fill half full.
Bake in 400\u00b0 oven for 20 minutes.
