Roasted Potatoes - cooking recipe
Ingredients

2 to 3 lb. potatoes
2 to 3 Tbsp. butter or margarine
salt and pepper
Preparation

Preheat oven to 350\u00b0 to 400\u00b0.
Wash and scrub potatoes good. Dice potatoes in cubes with skins on.
Put potatoes in large pot of water.
Boil potatoes 10 to 12 minutes.
Drain potatoes.
Heat butter in a shallow pan that will allow them to be in one layer. When butter is hot, roll potatoes in butter until they are covered completely.
Add salt and pepper.
Place them in a 350\u00b0 to 400\u00b0 oven.
Cook for about 1 1/2 hours, turning occasionally so they will brown evenly.
(You may use a little vegetable oil when butter cooks out of potatoes.)
