Greek Cabbage Soup - cooking recipe

Ingredients
    1 c. chopped onion
    3 Tbsp. olive oil
    2 qt. water
    1 lb. tomatoes, peeled and chopped
    2 lb. cabbage, shredded
    2 tsp. salt
    1/2 tsp. freshly ground black pepper
    2 Tbsp. minced parsley
Preparation
    Saute
    the
    onion in the oil 5 minutes.
    Add the water; bring to
    a
    boil.
    Mix
    in
    the
    tomatoes, cabbage, salt and pepper. Bring
    to
    a
    boil again and cook over low heat 1 1/4 hours, or until cabbage is tender.
    Taste for seasoning.
    Stir in
    the parsley.
    Serve with sauteed bread.
    Beef bone or ham bone
    or chunks
    may be added for richer taste.
    Also soup is very
    good if served with melted Gruyere or Mozzarella cheese on top with toasted croutons.
