Potato Salad For 100 - cooking recipe
Ingredients

22 lb. white potatoes, peeled and diced
water to cover
1/4 c. salt
3 c. onions, chopped
1 1/4 c. salad oil
4 2/3 Tbsp. salt
2 tsp. pepper
3/4 c. mustard
2 1/4 qt. chopped celery
18 eggs, boiled and chopped
2 c. pickle relish
1 1/4 c. pimientos, chopped
2 qt. salad dressing
Preparation

Cover potatoes with water; bring to a boil.
Add 1/4 cup salt. Cover and cook until tender.
Drain well; cool slightly.
Combine onions, oil, salt and pepper.
Add to potatoes.
Combine celery, eggs, relish, pimientos, salad dressing and mustard to potato mixture.
Mix lightly but thoroughly to coat potatoes.
