Chinese Torture - cooking recipe

Ingredients
    8 pieces candied ginger, finely diced (5 Tbsp. after dicing)
    3 oz. walnuts, chopped (about 8 Tbsp. after chopping)
    3 Tbsp. ginger syrup
    3/4 c. gingersnaps, crushed
    10 oz. semi-sweet chocolate, melted and cooled slightly
    2 Tbsp. cocoa
    1 Tbsp. superfine sugar
Preparation
    Combine candied ginger, walnuts, syrup, crumbs and melted chocolate.
    Form 1-inch balls.
    Mix cocoa and sugar.
    Coat each ball completely with this mixture.
    Wrap and store in refrigerator.
