Pumpkin Cake Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
1 c. chopped nuts (walnuts)
powdered sugar
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
1/2 tsp. nutmeg
Preparation

Beat eggs on high speed for 5 minutes.
Gradually beat in granulated sugar.
Stir in pumpkin and lemon juice.
Stir dry ingredients together and fold into pumpkin mixture.
Spread on greased and floured 10 x
15 x 1-inch cookie sheet.
Top with chopped nuts.
Bake at 375\u00b0 for 20 minutes or until done when tested.
Turn out on dish towel sprinkled with powdered sugar. Roll towel and cake together.
Cool.
Unroll.
