Gina Lloyd'S Chicken And Wild Rice Casserole - cooking recipe

Ingredients
    4 c. cooked wild rice (2 c. dry or two 6 oz. pkg.)
    3 full boneless skinless chicken breasts
    4 Tbsp. butter or margarine
    10 medium mushrooms, sliced
    10 scallions, chopped
    2 cans cream of chicken soup
    1/2 c. heavy cream
    1/2 c. sherry
    1 tsp. salt (I omit)
    2 cans artichoke hearts, drained and quartered
    2 c. grated carrots
    10 slices bacon, cooked and crumbled
    3 c. grated Mozzarella cheese
    grated Parmesan cheese for top
Preparation
    Cook wild rice according to package directions.
    (Bread and Circus sells bulk wild rice, Roach Bros. carries 6 ounce packages in the specialty food section rather than with other rices.)
    I cook the rice in a 6-quart pot.
