German Spice Bars(Lebkuchen) - cooking recipe

1 1/3 c. honey (you can substitute some molasses for honey)
3/4 c. sugar
3 Tbsp. butter
2 c. flour
1 tsp. baking powder
1/2 tsp. soda (if using some molasses)
1/2 c. blanched almonds (optional)
1/4 c. each: chopped citron, candied orange and lemon peel
1 1/2 to 2 c. more flour
1/4 tsp. ginger
1/2 tsp. cardamon
2 tsp. cinnamon
1/8 tsp. cloves
Preparation

Heat honey and sugar slightly in a pan.
Add butter.
Add 2 cups flour and baking powder; beat well.
Add nuts, citron, peels and spices.
Add 1 1/2 to 2 more cups flour until you have a thick, pliable dough.
Pat it 1/4 inch thick into pans (three 8 x 8-inch cake pans and one 9 x 9-inch cake pan).
Bake about 25 minutes. When cool, cut in squares and ice with Lemon Glaze.
Make this ahead for Christmas.
Keeps 6 months when in an airtight container!
