Sausage Zucchini Boats - cooking recipe

Ingredients
    4 medium zucchini
    1 lb. pork sausage
    1/4 c. chopped onion
    1/2 c. fine cracker crumbs
    1 slightly beaten egg
    1/2 c. grated Parmesan cheese
    1/4 tsp. salt
    1/4 tsp. thyme
    dash of garlic powder
    dash of black pepper
Preparation
    Cook whole zucchini in salted boiling water until tender, 7 to 10 minutes.
    Cut in 1/2 lengthwise segments.
    Scoop squash from shells and mash.
    Cook sausage with onion.
    Drain off excess fat. Stir in mashed zucchini, reserving 2 tablespoons Parmesan cheese. Add remaining ingredients.
    Mix with a spoon into shells.
    Place shells in a shallow baking dish.
    Sprinkle with remainder of Parmesan cheese and dash of paprika.
    Bake in moderate oven at 350\u00b0 for 25 to 30 minutes.
