Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant, peeled and sliced
    4 eggs, beaten
    1/2 tsp. pepper
    1 1/2 c. milk
    1 tsp. salt
    1 1/2 c. grated sharp cheese
    1 1/2 c. cracker crumbs
    1 stick margarine, melted
Preparation
    Cook eggplant until mushy; drain well.
    Add all ingredients. Reserve 1/2 cup cheese, 1/2 cup cracker crumbs and small amount of butter; mix well.
    Pour in greased baking dish.
    Sprinkle with reserved cheese, cracker crumbs and melted butter.
    Bake at 325\u00b0 to 350\u00b0 for 25 to 30 minutes.
    Makes 6 to 8 servings.
