Oletha'S Hominy - cooking recipe

Ingredients
    1 large can white hominy
    1 large can yellow hominy
    1 pt. sour cream
    1 can Ortega chilies, chopped
    1/2 medium onion, grated
    3 strips bacon, fried and crumbled
    4 oz. Cheddar cheese, grated
    4 oz. Monterey Jack cheese, grated
    1/2 c. butter (1 stick)
    1 large onion, minced
    1 1/2 lb. mushrooms, sliced thin
    2 large cloves garlic, minced
    4 eggs
    1 c. milk
    6 slices egg bread (1/4-inch cubes, white bread is okay)
    salt and pepper
    pinch of nutmeg
    pinch of chili powder
Preparation
    Melt butter in large skillet over medium heat.
    Add onion and saute about 5 minutes until tender.
    Add mushrooms and garlic and saute about 3 minutes.
    Remove from heat.
    In a bowl, combine eggs and milk; add bread and blend in seasonings.
    Add mushroom mixture and stir gently.
    Taste and adjust seasoning.
    Spoon into baking dish.
    Bake at 350\u00b0 for about 1 hour.
