Italian Skillet Frittata - cooking recipe

Ingredients
    3 tbsp. oil
    2 c. frozen shredded has brown potatoes
    1 c. broccoli florets
    1 c. red pepper
    1 c. carrots
    1 c. green onions
    1 c. tomatoes
    Parsley
    6 eggs, lightly beaten
    2 tbsp. milk or water
    3/4 c. grated parmesan cheese, divided
Preparation
    Heat oil in large nonstick skillet on medium high heat. Add potatoes and vegetables. Cook 5 minutes or until potatoes are browned, stirring occasionally.
