Molded Guacamole Ring - cooking recipe

Ingredients
    2 envelopes unflavored gelatin
    1/2 c. cold water
    1 1/2 c. boiling water
    6 Tbsp. fresh lemon juice
    1 1/2 Tbsp. grated onion
    2 1/2 tsp. salt
    dash of Tabasco sauce
    3 c. mashed avocado (3 large)
    3/4 c. mayonnaise
    seafood or chicken salad
    cherry tomatoes
Preparation
    Soften gelatin in cold water and dissolve in boiling water. Add lemon juice, onion and seasonings.
    While gelatin mixture is still liquid, stir in avocado.
    Fold in mayonnaise.
    Pour into 10-inch ring mold and chill until firm.
    Unmold and fill center with chilled seafood or chicken salad.
    Surround with cherry tomatoes.
    Serves 12.
    This may also be served on a tray surrounded with tortilla chips for an appetizer.
