Eggplant Parmesan - cooking recipe
Ingredients

1 small eggplant, unpeeled, in 1/2-inch slices
3/4 c. tomato sauce
1 small onion, peeled and sliced
1 small bell pepper, seeded and sliced
4 oz. can mushrooms, drained
garlic salt and pepper to taste
pinch of basil and oregano
3 oz. shredded Mozzarella cheese (part skim)
1 Tbsp. grated Parmesan cheese
Preparation

Bake eggplant slices in single layer on a nonstick baking sheet, uncovered, 15 to 20 minutes at 400\u00b0 until soft.
