Boudin Or Cajun Sausage - cooking recipe

Ingredients
    36 lb. pork butts
    6 lb. fresh pork skin
    8 or 10 lb. pork liver
    6 lb. onions
    1 c. salt
    1/2 c. cayenne pepper
    6 bundles green onions
    6 Tbsp. garlic powder
Preparation
    Cut fresh pork butts into 1 1/2 pound pieces.
    Boil all of the ingredients in 8 gallons of water.
    When meat separates from bone, strain meat from stock.
    Reserve stock.
    Grind meat mixture in a meat grinder or food processor.
    Cook 36 cups of rice.
    Combine mixture with cooled rice and add enough stock to make it moist.
