Mrs. Lawrence'S Surprise Cake - cooking recipe

Ingredients

3 c. plain flour
2 c. sugar
1 tsp. salt
1 tsp. soda
3 large bananas
1 small can crushed pineapple with juice
1 c. chopped nuts (pecans or black walnuts)
1 1/4 c. cooking oil
3 eggs
1/2 tsp. vanilla
1/2 tsp. coconut extract

Preparation

Sift together flour, sugar, salt and soda.
Mix together with spatula.
Make a hole in the mixture; add rest of ingredients. Blend (don't beat) and stir easy with spatula so as not to mash bananas.
Bake in 3 layer cake pans at 325\u00b0 for 25 minutes.
Ice with cream cheese icing.
Can be baked in tube or sheet cake pan.
