Ingredients

1/3 c. water
2 Tbsp. butter
1 tsp. minced onion
1 Tbsp. cornstarch
3 c. hot, diced, cooked beets
1/2 c. vinegar
Preparation

Mix sugar to taste, salt and cornstarch in top of double boiler.
Add vinegar and cook over boiling water until smooth and thick.
Add butter, onion and beets and let heat for 30 minutes.
