Diet Lemon Cheese Cake - cooking recipe
Ingredients

2 graham crackers, crushed
1 (4 oz.) pkg. lemon jello flavor (sugar-free)
2/3 c. boiling water
1 c. Light 'n Lively low-fat cottage cheese
1 (8 oz.) pkg. light Philadelphia cream cheese
2 c. lite Cool Whip
1 c. reduced cherry pie filling
Preparation

Spray an 8 or 9-inch pie plate with nonstick cooking spray. Sprinkle crumbs on bottom and sides.
Dissolve gelatin in boiling water; cool.
Into blender put gelatin, cottage cheese and softened cream cheese; blend until smooth.
Pour into large bowl. Gently stir in Cool Whip.
Pour into crumbs.
Chill 4 hours, until set.
Top with cherry filling, if wanted.
