Pumpkin Roll - cooking recipe

3 eggs
1 c. sugar
2/3 c. pumpkin
3/4 c. flour
1 tsp. ginger
1 tsp. baking powder
1/2 tsp. nutmeg
1/2 tsp. salt
2 tsp. cinnamon
1 c. chopped pecans
confectioners sugar (to dust roll)
2 (3 oz.) pkg. cream cheese
4 Tbsp. butter
1/2 tsp. vanilla
1 c. powdered sugar
Preparation

Beat eggs on high speed of mixer for 5 minutes.
Gradually beat in sugar.
Stir in pumpkin; stir together flour, baking powder, cinnamon, ginger, nutmeg and salt.
Fold into pumpkin and spread on a well-greased and floured cookie sheet.
Top with nuts; bake at 375\u00b0
for 15 minutes.
Turn out on towel dusted with powdered sugar.
Starting at one end, roll towel and cake.
Cool in freezer and then unroll.
