Barbara Simon'S Chicken With Cranberries - cooking recipe

Ingredients
    1 (3 to 3 1/2 lb.) chicken or boneless breasts
    1 c. flour
    salt and pepper to taste
    1 c. peanut oil
    1 (16 oz.) can whole sweetened cranberries
    1/4 c. peeled and chopped yellow onions
    3/4 c. orange juice
    1/4 tsp. ground cinnamon
    1/4 tsp. ginger
Preparation
    Cut up chicken; pat dry with paper towels.
    Mix flour with salt and pepper and dredge each piece of chicken.
    Pan-fry in peanut oil just until brown, turning once.
    In the meantime, mix remaining ingredients in a stainless steel saucepan and bring to a boil.
    Pour this over the chicken and cover.
    Cook slowly for 35 to 40 minutes or until chicken is very tender.
