Luci'S Summer Salad - cooking recipe

Ingredients
    1 medium cucumber, seeded and diced
    1 yellow bell pepper, seeded and diced
    1/2 red onion, finely diced
    2 tomatoes, diced
    1 Tbsp. olive oil
    2 Tbsp. red wine vinegar
    salt to taste
Preparation
    Mix diced vegetables together in a small bowl. Drizzle olive oil over vegetables, then the red wine vinegar. Stir lightly and salt to taste. You can adjust the tartness by adding more vinegar. Serve immediately. Makes 4 large servings.
