Omelette Aux Fines Herbes - cooking recipe

Ingredients
    6 large eggs
    1/4 tsp. salt
    1/4 tsp. pepper
    1/4 c. butter or oleo
    1 Tbsp. finely chopped fresh basil
    1 Tbsp. finely chopped fresh parsley
    1 Tbsp. finely chopped fresh chives
Preparation
    Whisk together first three ingredients.
    Heat an omelet pan over medium heat.
    Add butter, coating bottom of pan.
    Pour egg mixture into pan.
    As it cooks, gently lift the edges of the omelet with a spatula, tilting pan to allow the uncooked portion to flow underneath the cooked portion.
    Sprinkle herbs over omelet.
    Fold in half, transfer to plate.
    Use parsley for garnish, if desired. Makes 4 servings.
