Italian Wedding Soup - cooking recipe

Ingredients
    4 chicken breasts, skinned
    3 qt. water
    salt to taste
    1/2 tsp. pepper
    1 medium chopped onion
    1/2 c. celery, diced
    1 c. carrots, diced
    1 pkg. frozen spinach
    3/4 c. acini de pepe, cooked
    1 small can mashed tomatoes
    grated Parmesan cheese
    1 Tbsp. parsley
Preparation
    Wash chicken; place in large pot with water and boil.
    Remove foam that forms.
    Add salt, pepper, onion, celery and carrots. Cook 2 hours or until meat is tender.
    Remove chicken and shred. Add spinach and already cooked pasta.
    Add shredded chicken and tomatoes.
    Cook 1/2 hour longer.
    More water may be added if necessary.
    Add cheese, garnish with parsley and serve while hot.
