Diabetic Cupcakes - cooking recipe

Ingredients
    1 c. water
    1 c. raisins
    1 c. unsweetened applesauce
    2 eggs
    artificial sweetener (to equal 1 c. sugar)
    3/4 c. oil
    1 tsp. baking soda
    2 c. flour
    1 1/2 tsp. cinnamon
    1/2 tsp. vanilla
    1/2 tsp. salt
Preparation
    Cook raisins in water until they are soft.
    Drain. Add applesauce, eggs, sweetener and oil.
    Mix well. Blend in baking soda, flour and remaining ingredients. Bake at 350\u00b0 about 19 minutes.
    One cupcake equals 1 fruit and 1 fat.
