Betsy'S Italian Potato Souffle - cooking recipe

Ingredients
    3 lb. potatoes, cooked
    2 eggs
    1/2 c. Parmesan cheese
    1 tsp. oregano
    1/3 c. sherry
    8 oz. Mozzarella cheese
    seasoned, buttered bread crumbs
Preparation
    Mash potatoes.
    Add 2 beaten eggs, Parmesan cheese and seasonings.
    Layer with Mozzarella cheese.
    Place in greased casserole dish.
    Top with seasoned, buttered bread crumbs.
    Bake 30 minutes at 350\u00b0.
    Can be frozen.
    Serves 6.
