Chicken Fried Rice - cooking recipe

Ingredients
    1 c. diced, cooked chicken
    2 Tbsp. soy sauce
    1 c. uncooked long grain rice
    1/4 c. canola oil
    2 1/2 c. chicken broth
    1/2 c. chopped onion
    1/4 c. chopped green pepper
    1/4 c. thinly sliced celery
    1 c. lightly steamed broccoli flowerets
Preparation
    Combine chicken and soy sauce; let stand 15 minutes.
    Heat oil over medium heat; add rice and cook until golden brown, stirring frequently.
    Add chicken and broth; reduce heat and simmer, covered, for 20 to 25 minutes, or until rice is tender.
    Remove cover; stir in onion, green pepper, celery and broccoli.
    Cook until liquid is absorbed.
    Serve immediately with extra soy sauce.
