Fried Rice - cooking recipe

Ingredients
    4 Tbsp. bacon fat or cooking oil
    2 eggs, optional
    1/2 c. chopped scallions
    1/2 c. leftover roast pork, diced
    1/4 c. celery, sliced
    1/2 c. cooked peas
    2 c. cooked rice
    1 Tbsp. soy sauce
Preparation
    Heat 1 tablespoon fat in a small skillet.
    Break eggs into a bowl and beat well.
    Add to skillet and cook omelet fashion.
    Break eggs into small pieces and set aside.
    In a large skillet heat remaining 3 tablespoons fat.
    Add scallions and celery, stir-fry. Add pork and fry briefly.
    Stir in peas, then add the rice, stirring rapidly.
    Add 1 tablespoon soy sauce, mixing well, then add eggs.
    Cook and stir until everything is heated through.
