Ingredients

4 slices bread (diet, high-fiber or whole grain)
2 eggs
1/2 c. skim milk
2 tsp. baking powder
1/2 tsp. vanilla extract
Preparation

Combine ingredients in blender or food processor, cover and process smooth.
Spray a nonstick griddle with cooking spray until slick.
Make 4 large (or 8 small) pancakes.
Cook over moderate heat until tops are bubbled, turn and brown other side. Makes 4 servings, under 115 calories each.
