Stuffed Zucchini - cooking recipe
Ingredients

4 medium zucchini
1 c. shredded cheese (your choice)
1 egg, beaten
1 c. rice (already cooked)
2 Tbsp. chopped onion
2 Tbsp. fine bread crumbs
2 slices cooked bacon, crumbled
salt
Preparation

Parboil zucchini about 7 minutes.
Cool.
Cut in half.
Scoop out pulp.
Chop pulp.
Mix with cheese (reserving 1/2 cup), eggs, rice, onion, bread crumbs and salt.
Stuff shells with mixture. Sprinkle with bacon.
Bake in greased baking dish at 350\u00b0 for 20 to 25 minutes.
Top with cheese the last few minutes of baking.
