Vegetable Soup(Heart Smart) - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    1/2 c. chopped onion
    2 garlic cloves, minced
    1 (16 oz.) can tomatoes in juice, chopped
    1 c. low sodium chicken broth
    1 c. sliced carrots (about 2 medium)
    1 c. sliced celery
    1/4 c. chopped fresh parsley
    1 tsp. basil, crushed
    1/4 tsp. salt
    1/8 tsp. pepper
    1 c. frozen lima beans
    1/2 c. water
Preparation
    In medium saucepan over medium-high heat in hot oil, cook onion and garlic about 3 minutes or until soft, stirring frequently.
    Add tomatoes in juice, chicken broth, carrots, celery, parsley, basil, salt and pepper and bring to a boil. Reduce heat; cover.
    Simmer about 20 minutes.
    Add lima beans and water; bring to a boil.
    Reduce heat.
    Cover.
    Simmer about 20 minutes or until beans are tender.
    Makes 6 servings, about 3/4 cup each.
