Cream Of Broccoli Soup - cooking recipe
Ingredients

2 Tbsp. butter
1 medium onion (chopped)
2 Tbsp. flour
1/2 tsp. salt
1/2 tsp. pepper
1 can (14 oz.) chicken broth
1 (10 oz.) pkg. frozen chopped broccoli, thawed and well drained
2 c. milk
grated Parmesan cheese
Preparation

Melt butter, add onions and saute until light golden.
Blend in flour, salt, pepper and stir constantly about 2 minutes.
Gradually add broth, then broccoli and bring to boil.
Stir frequently, cover and simmer until broccoli is tender.
Puree in batches.
Return to saucepan, add milk and bring to simmer.
Ladle into bowl and sprinkle with grated cheese; run under preheated broiler until cheese is browned.
