Southwestern Skillet Supper - cooking recipe
Ingredients

1 pkg. Idahoan complete potato flakes
1 Tbsp. vegetable oil
1 lb. ground round
1 medium onion, diced
2 tsp. chili powder
3/4 tsp. salt
1 (16 oz.) tomatoes, diced
1 can chili beans
1 can corn, drained
1/2 c. sharp cheese
1/4 c. cilantro, chopped
Preparation

Heat oil in a 12-inch skillet over medium-high heat.
Add beef and onion and cook until brown.
Stir in chili powder and salt.
Cook 1 minute longer.
Add tomatoes, beans and corn.
Cook over high heat until bubbling.
Reduce heat and simmer for 10 minutes.
Prepare potatoes as directed on package.
Stir in cheese and cilantro.
Top mixture with 1/2 cup of potatoes and enjoy.
