Cajun Hush Puppies - cooking recipe
Ingredients

2 c. yellow cornmeal
1 c. plus 3 Tbsp. flour
1 1/2 tsp. sugar
1 tsp. salt
2 tsp. baking powder
1/2 tsp. soda
1 tsp. creole seasoning
1/2 c. buttermilk
2/3 c. water
1/2 c. melted oleo
1 egg, well beaten
1 c. onion, grated
1 medium bell pepper, chopped
2 jalapeno peppers, seeded and chopped fine
Preparation

Combine dry ingredients.
Add buttermilk, water, oleo and egg. Mix well.
Stir in onion and peppers.
Carefully drop batter by teaspoonful into hot oil.
Fry 3 to 5 minutes until golden brown, turning once.
Yield:
2 1/2 dozen.
