Spinach Madeline - cooking recipe

Ingredients
    3 pkg. frozen, chopped spinach
    6 Tbsp. butter or oleo
    3 Tbsp. flour
    3 Tbsp. onion, chopped
    3/4 c. half and half
    3/4 c. vegetable liquid
    3/4 tsp. black pepper
    1/2 tsp. salt
    9 oz. jalapeno cheese
    pepper to taste (red)
Preparation
    Cook spinach according to directions. Drain and reserve liquid.
    Melt butter or oleo in saucepan over low heat. Add flour and stir until well blended, but not brown. Add onion and cook until soft and clear.
    Add liquid slowly, stirring constantly, until smooth and thick. Continue stirring. Add seasoning and cheese which has been cut into small pieces.
    Stir until melted. Combine spinach. Pour into casserole and top with buttered bread crumbs.
    Bake at 350\u00b0 until bubbly.
