Hearty Chicken Pot Pie - cooking recipe

1 c. (10 3/4 oz.) condensed chicken broth
1 1/3 c. water, divided
4 med. carrots, thinly sliced (about 1 1/2 c.)
3 med. red potatoes, scrubbed and diced (about 1 1/2 c.)
2 Tbsp. olive oil
2 c. quartered med. mushrooms
1 med. onion, coarsely chopped
1 c. frozen peas
1/3 c. all-purpose flour
1 refrigerated unbaked pie crust (for 9-inch pie)
2 1/2 c. chopped cooked chicken
Preparation

Combine broth, 1 c. water, carrots, and potatoes in a medium saucepan.
Bring to a boil; reduce heat and simmer over low heat 10 minutes.
