Squash Casserole - cooking recipe

Ingredients
    1 qt. sliced squash (cooked & drained)
    1/2 c. medium cheddar cheese
    1/2 c. minced onions
    1 1/2 c. crushed crackers (ritz)
    2 eggs, beaten
    salt & pepper
Preparation
    Put squash in large casserole dish & mash.
    Add cheese leaving enough to cover later.
    Stir in crackers & minced onions. Add eggs & stir quickly to prevent them from cooking.
    Salt & pepper to taste.
    Cover with rest of cheddar cheese.
    Cook at 350 degrees for 20 minutes.
    Uncover and cook an additional 20 minutes or until slightly brown.
