Harriet'S Chicken Cantonese - cooking recipe

Ingredients
    1 lb. cut up chicken
    1/4 c. oil
    1/2 c. soy sauce
    6 Tbsp. dry sherry
    2 tsp. vinegar
    2 minced scallions
    2 large cloves garlic, minced
    1/8 tsp. cayenne
    2 tsp. ginger
Preparation
    Heat oil in skillet or wok and saute chicken until brown. Blend rest of ingredients and add to skillet.
    Mix; cover and simmer for 25 minutes, stirring occasionally.
    Place chicken in platter and coat with sauce.
